Review #1: This is One Solid Mixer!!!

I have purchased a model commercial, brand of mixer because I wanted to make whatever I wanted in the quantity I wanted without worrying about the motor seizing or being limited by size of batch. After one week, I have made bread (12 cups of flour) for 4 large loaves with no problem whatsoever. I also mixed pasta dough which can be a very stiff dough. Reading the MANUAL from first to last page was very helpful especially if an adjustment was needed. Mine was perfectly adjusted. It is quiet, strong, large bowl, that the guarantee is for two years instead of one, and I love the fact that the attachments are stainless steel - making them dishwasher safe! It is the best for my needs. I also learned the difference between AC/DC which made a lot of sense to me so helped in my decision on which model of machine I would choose. Yes, it is somewhat pricey but hey, you get quality and it works.

Review #2: Doesn’t Break a sweat: total worth it

This is the Bentley for bakers! I have had Kitchen Aids for decades and used them in my professional kitchen/bakery and at home. But, while they are sturdy, they always groaned and labored with heavy doughs. For that reason, I was careful and if they got hot, would let them rest. I have been looking for years for that home machine that was truly larger enough to make a difference AND had the motor to match. This has all that and more. I am ecstatic with this machine.

What I LOVE!!~~

The size--I can do my triple loaf recipes without taxing the motor or overflowing the bowl and large triple cookie recipes

The quietness--this is quieter than my older, smaller machines

The accessories--The whip is professional big gun quality and material; the hook is spiral, stainless, sexy wonderfulness, the paddle is the same.

The flip up opening for attachments is a nice touch and a nice change from having to unscrew and remove.

I have kept my smaller mixer because sometimes this is too big for some jobs or I should say, more than I need for some jobs. You could use it for smaller jobs but it is nice to have choices when you cook and bake a lot. If I were to have one, this would be it. I had almost given up on Kitchen Aid to have a truly bigger machine but they came through. The 6-7 quart mixers that have come out in the last few years are just not really going to accommodate the bigger batches and certainly the motors don't. This doesn't heat up, doesn't groan, is truly a workhorse and I don't mean a quarter horse, I mean a Clydesdale~~large and graceful and doesn't break a sweat.

Review #3 Amazing workhorse!

I purchased this for my school and it's used often to make various types of both dog and people cookies.

The only bad thing about it is when I'm home and I use my 6 quart professional, it seems inferior and I wish it were commercial.

This mixer is substantial and feels very sturdy. It reminds me of my mother in law's 35 year old KitchenAid (back when they were made by Hobart) and I feel it could last just as long.

It will certainly outlast my teaching career.

Pellet Pizza Oven

Place hardwood cooking pellets in the burnpot. Break off a few pieces of fire starter, and place on top. Light a match, and its as simple as that!

Temperature With the burnpot blower, were able to reach peak temps in half the time! We want to add small amounts of additional pellets to the hopper every 60 seconds or so to maintain a strong fire. Reaching proper temperature on the cooking stone is key. Depending on our pizza crust, we want the stone between 650 and 850 degrees Fahrenheit. With the insulated front door, we have minimal heat loss, allowing us to cook quicker, with less fuel needed. Now that our stone is up to proper temperature, its time to slide in the pizza!

Cooking the Pizza The pizza oven includes a stainless steel pizza peel. Make sure to lay down flour or cornmeal for an easy transition to the stone. Practice makes perfect. At these temps, our pizza is going to cook fast! We recommend pulling the pizza out every 30 seconds, and doing a rotational turn for best results.
