Not all Microwave Ovens Are Equal

Commercial kitchens almost always include a commercial microwave due to its incredible versatility. Whether you're reheating pre-prepared meals, steaming vegetables, or defrosting proteins, this essential piece of equipment offers both convenience and efficiency. While microwave ovens are standard in many foodservice settings, not all models are created equal. Beyond the distinction between residential and commercial microwaves, there are varying grades within the commercial category, including light-duty, medium-duty, and heavy-duty options. Each grade is defined by wattage and the frequency of use. A light-duty microwave typically has around 1000 watts and should be used no more than 50 times daily. Medium-duty microwaves, with wattages ranging from 1200 to 2000, can handle up to 150 uses per day and offer faster cooking speeds thanks to their higher wattage. Heavy-duty microwaves, boasting wattages over 2000 (and sometimes reaching 3000+), are built for intensive daily use—up to 200 times or more—and are known for their durability and speed.

When selecting a commercial microwave, it's crucial to consider the specific needs of your environment. Light-duty models are ideal for low-traffic areas like break rooms, breakfast bars, concession stands, and wait stations. These spaces often operate during limited hours and see infrequent use. For locations like convenience stores, cafes, bakeries, or pastry shops that require slightly more frequent use, medium-duty microwaves are a better fit. However, if you run a bustling kitchen where the microwave serves as more than just a reheating tool—whether it's steaming vegetables, defrosting proteins, or preparing full meals—a heavy-duty microwave is the way to go. Although it may cost more upfront, it’s an investment worth making for businesses such as quick-service restaurants (QSRs), large cafeterias, catering operations, and high-volume kitchens.
